For 2 people, easily multiplied!
lettuce wraps:
1 head bibb lettuce or large romaine leaves or any lettuce-cup style leaf
2# ground beef
1 bunch mint leaves
1 bunch basil
2 stalks celery, sliced thinly
1/2 red onion, sliced into thin rings
2 limes (fresh limes! no bottled lime juice!!!!)
fish sauce (if you LIKE)
1 tsp ginger, minced
1 clove garlic, minced
1 Tbs soy sauce
1 Tbs vinegar (red or white wine)
1 bunch green onions
1 jalapeno, sliced into thin rings (seeds in if you like heat, seeds removed if not)
For the rice…
1 cup uncooked basmati rice
1 cup canned unsweetened coconut milk
For the pickles…
5 radishes
1 daikon radish
1 cup vinegar (rice wine or white wine vinegar)
1/4 cup sugar
4 Tbs salt
3 cloves garlic, peeled
pinch of cayenne
equipment:
microplane/grater
high sided pot for rice, think small pasta pot
large dutch oven or saute pan
small pot to make pickle juice
1 large mixing bowl
