For the chicken parmigiana…
2 chicken breasts, boneless skinless
one 28 oz. can crushed or pureed tomatoes
1 small white onion, minced
1 clove garlic, minced
2 large eggs
1 cup panko bread crumbs
1/2 cup grated mozzarella (or your choice)
2 Tbs grated parmigianno
3 leaves basil (optional)
neutral oil
*serving suggestions: Spaghetti tossed with olive oil and chili flakes, buttered noodles…
For the antipasti chopped salad
1 head romaine lettuce
1 head radicchio
1/4 cup kalamata olives, pitted
1 piece sweet or spicy salami (you pick), if you can’t find nubs of salami, slices work too! OR prosciutto works as a good substitute
1/4 cup chickpeas, drained
spicy sweet peppers (if that’s your thing)
a couple marinated artichoke hearts
1/4 cup provolone cheese, cut into chunks
red wine vinegar
dried oregano
neutral oil
olive oil
For the tiramisu
1 package lady fingers
1 1/2 cups whipped cream
1/4 cup powdered sugar
8 oz. mascarpone cheese (sour cream is a good sub)
1 1/2 cups cold coffee or espresso
1/4 cup cocoa powder

electric mixer or arm strength to beat cream
