Recipes are given for 2!

For the chicken…

  • 4 chicken thighs, bone in, skin on

  • 2 cups button mushrooms, halved (or any other cool shrooms you can get)

  • 1 shallot, minced (chopped very finely)

  • 1/2 cup marsala wine

  • 1 cup chicken stock (or boullion broth)

  • 1/2 cup heavy cream

  • 1 bay leaf

  • 1 sprig of thyme

  • 1 Tbs butter

  • neutral oil (canola or veg or peanut)

for the spaetzle…

  • 2 eggs

  • 1 cup milk

  • 2 cups flour

  • 1 pinch nutmeg

  • 2 Tbs butter

  • salt

For the shaved brussels salad

  • 1 cup brussel sprouts, halved

  • 1 orange

  • 1/3 cup walnuts, toasted

  • olive oil

  • 1 tsp dijon

  • 1 Tbs parmigiano or pecorino

For THE APPLE

  • 2 apples

  • 2 Tbs butter

  • 1/2 cup dried wuick cooking oats (any oatmeal works as long as it’s not steel cut)

  • pinch cinnamon

  • 1 handful almonds

  • 2 Tbs brown sugar

  • suggested vanilla ice cream on the side!!!

PRE CLASS LEGWORK: Oven at 350! Pasta pot on it’s way to boiling!

Equipment:

  • MOST importantly: a metal colander or a bowl with holes (for the spaetzle process) OR a box grater with a large holed side

  • pasta pot full of boiling water

  • 1 large skillet with lid or dutch oven

  • 1 baking dish

  • 2 mixing bowls
